Varietal Composition: 48% Malbec, 29% Cabernet Sauvignon, 23% Merlot
Our second release of New Leaf American Rosé is sourced from the prestigious Horse Heaven Hills appellation in Washington state. Prior to processing, the grapes macerated on the stem at near freezing temperatures for five days allowing the skins to naturally break down under safe conditions. The fruit was then destemmed (not crushed) and pressed with less than 25 psi to gently extract the juice while avoiding any unwanted bitterness from the skins. The juice was held at near freezing temperatures for 12 days while the sediment was kept in suspension by circulating with CO2. To showcase this amazing fruit, we implemented a unique fermentation regiment using two strains of yeast isolated in the Rhône region of France. These diverse yeasts were used to focus the intensity of flavor and aromas of the rosé while increasing body and texture. The fermentation was fed with organic nitrogen sources, minerals, and vitamins which helped to further refine the unique flavor and character of this lovely wine. Cold filtration and gentle bottling into both bottles and sixtel kegs preserved this wine at the pinnacle of its freshness for your enjoyment.
